Monday Munchies: Beef and Salsa Skillet

I found this recipe online years ago, and I no longer remember where it’s from. It’s another fairly cheap, and super easy meal. Plus there are A LOT of leftovers for lunch the next couple of days.

Beef and Salsa Skillet

What You Need (Serves up to 4)

  • 1 lb ground beef (I prefer 92/8% fat distribution, but go with whatever you like best)
  • 1 16oz Jar Old El Paso Thick ‘n Chunky Salsa (This is getting harder and harder to find. My second choice is Pace Chunky Salsa) in the spiciness level of your choice
  • 1 15/16oz can of Dark Red Kidney Beans
  • 1 15/16oz can of Whole Kernel Sweet Corn
  • 1 8oz can of Tomato Sauce
  • Cayenne and/or Chile Arbol powder (optional)
  • Sargento 4 Cheese Mexican Shredded Cheese
  • Flour Tortillas
  • Large pan

Monday Munchies: Pastel de Tres Leches

I found this one on Cooking Con Claudia’s YouTube channel as well. The recipe is slightly modified from her video Easy and Delicious Tres Leches Cake. Pastel de Tres Leches literally translates to cake of three milks. It’s one of my favorite desserts.

What You Need

  • 1 Box vanilla cake mix (+ required ingredients to make cake and 1 tbsp Mexican Vanilla Blend. You can substitute regular vanilla extract)
  • 1 16oz container of half and half
  • 1 14oz can of sweetened condensed milk
  • 1 12oz can evaporated milk
  • 16oz (2 cups) heavy whipping cream
  • 1½ tbsps sugar
  • 1 tbsp Mexican Vanilla Blend (You can substitute regular vanilla extract)
  • Ground cinnamon
  • Cake pan
  • Large mixing bowl
  • Hand or stand mixer

Monday Munchies: Watermelon & Cucumber Agua Fresca

I found this one on Cooking Con Claudia’s YouTube channel as well. The recipe is slightly modified from her video How To Make The Best Watermelon and Cucumber Agua Fresca.

For those unfamiliar with Agua Fresca, think of it like lemonade but with other fruits. You mix the fruit juice(s) with water to get a refreshing drink.

What You Need

  • 1 Ripe Seedless Watermelon
  • 1 Large English Cucumber
  • 2-3 Lemons
  • ¼ cup sugar
  • 4 cups water
  • Blender
  • Pitcher or container for storage

Monday Munchies: Cucumber & Lime Agua Fresca

I found this one on Cooking Con Claudia’s YouTube channel. You’ll likely be seeing her channel mentioned several times, as I really like her recipes. The recipe is slightly modified from her video How To Make A Refreshing Cucumber Water With Lime.

For those unfamiliar with Agua Fresca, think of it like lemonade but with other fruits. You mix the fruit juice(s) with water to get a refreshing drink.

Cucumber & Lime Agua Fresca

What You Need

  • 4 cucumbers
  • ⅓ cup fresh squeezed lime juice (takes 3-4 limes)
  • ⅓ cup sugar
  • ¾ cup + 2½ cups + 2½ cups water
  • Blender
  • Small pot
  • Nut milk bags -OR- fine mesh strainer
  • Pitcher or container for storage

Monday Munchies: Mac & Cheese & Cheetos

Let me preface this by saying that I never promised these recipes would be healthy. This is a holdover from my high school/college days. I rarely eat it now, because my body protests if I over indulge, but I still love it.

In high school, it was common to have the lunch lady ladle nacho cheese into a bag of hot cheetos. That combination was heavenly. But getting perfectly melted nacho cheese at home can be difficult, so I experimented, and eventually settled on mac & cheese & cheetos. I have no idea how this would taste with regular cheetos, but you’re welcome to experiment if you aren’t a fan of spicy food.

As a side note, the photo shows standard Kraft mac & cheese, because they were out of the shell version, which, in my opinion, is much better. So follow the recipe, not the photo.

Monday Munchies: Golden Milk Dalgona Drink

I found this one on Honeysuckle’s YouTube channel. Although the video is titled Dalgona Coffee Recipes, only one is actually coffee based, and this isn’t it. The Golden Milk Dalgona Drink is the final one she makes in the video.

Combining a couple of recipes from the original video, I’ve made two different versions of this drink. The egg-based version (below) is really good for breakfast. The cream-based version makes a great dessert.

Golden Milk Dalgona Drink

What You Need (Serves 2)

  • ½ tsp turmeric
  • ⅛ tsp cinnamon
  • ⅛ tsp ginger powder
  • pinch of black pepper
  • 1½ tsp sugar
  • 2 egg whites -OR- ¼ cup heavy whipping cream (see deviation below)
    NOTE: You can’t use the egg whites that come in a carton, those won’t whip up.
  • ~8oz of your favorite milk
  • 2 16oz cups (bigger cups mean less mess when you mix)

Monday Munchies: Banana Mocha Smoothie

I found this one on Girl Gone Gourmet after a Google search for healthy snacks. I’m not a fan of coffee, so I was a bit nervous about trying it, but it’s really good! I halve the recipe, because the original is practically a meal.

Banana Mocha Smoothie

What You Need

  • ¼ cup cold brew coffee (You can make your own, but I buy a small bottle of plain cold brew coffee. It lasts for quite a while in the fridge.)
  • 1 banana, sliced and frozen
  • ¾ cup milk
  • 1 tbsp unsweetened baking cocoa

Monday Munchies: Greek Yogurt Ranch Dip

I was skeptical when I came across this recipe on womenshealthmag.com. However, one bite was all it took to hook me. This is actually delicious! I’ve done the math so that you can just use a typically yogurt container, instead of measuring out the ½ cup called for in the original recipe. I list exactly what I purchased, but I don’t think brands are all that important, quantity is more important.

What You Need

  • 5.3oz container of Chobani Plain Nonfat Greek Yogurt
  • 1 tbsp + 2¼ tsp Hidden Valley Ranch Dip Mix
  • 7oz container, or larger, with lid

I’m starting a new series: Monday Munchies. I’ll be sharing recipes that I prepare often. These may be slightly modified recipes I’ve found online or in cookbooks — I’ll give credit where credit is due — or things I’ve “invented” or even recipes passed down in my family. Regardless, they’ll be recipes I find delicious.

I’ve dubbed this week’s recipe a Matcha Latte — although Matcha Milk Tea would work, too. This recipe didn’t come from any one place. I just really like matcha tea, and wanted to try making it at home during the lockdown last year. I drink one of these every morning; it makes a good breakfast substitute for those of us who don’t like to actually eat breakfast. I hope you like it, too.
