Monday Munchies: Elote

Elote technically translates to just “Corn,” but it refers to the street food. Typically, you get boiled or roasted corn on the cob on a stick, slathered with goodies, but, when corn on the cob is scarce, you can use frozen corn.

What You Need (Serves 2)

  • 1 ear of corn per person, cooked -OR- 1 cup of frozen corn, cooked
  • Butter
  • Mayonnaise
  • 1 Lime
  • Chili Powder (I prefer a mix of Cayenne and Chile Arbol, but choose whatever you can handle)
  • Cotija Cheese (You can substitute Parmesan Cheese)

How to Make It

  1. Slather butter on your corn, then mayonnaise.
  2. Sprinkle the cheese over the top to form a good coating. If you’re using parmesan cheese, you may want to sprinkle a bit of salt over the top as well. Then add as much chili powder as you want.
  3. Optional, squeeze some lime juice over the top of the corn.
  4. Make sure you scoop up the extra toppings with your corn cob.
